

Friday afternoon – loads of laughter & lots of fun! First Debbie & Leo joined us (inside our camper due to rain) to indulge in crab salad, grilled shrimp cocktail, & caprese salad – delish!

Crab Salad
1 lb jumbo lump crabmeat
3-4 stalks celery cut into fine dice
6 tsp finely chopped fresh chives
1/3 C mayo
3 T sour cream
2 tsp freshly squeezed lemon juice
1/2 tsp dijon mustard
salt, pepper, old bay to taste
Toss crabmeat, chives, celery in medium bowl. In separate small bowl whisk together mayo, sour cream, lemon juice & mustard. Add dressing to crab mixture and stir gently until just coated. Add salt/pepper/old bay to taste. Refrigerate until ready to serve.
Caprese Salad
1 lb assorted cherry tomatoes
8 oz Mozzarella pearls
fresh basil leaves
olive oil,
balsamic vinegar or lemon juice
Slice tomatoes in half, tear basil leaves, add mozzarella pearls, drizzle okive oil & vinegar or lemon juice. Toss gently, salt & pepper to taste.

Then we wandered over to see their camper and try out the homemade beer brewed by their daughter Christie & hubby James. The American Pale Ale was absolutely fantastic!!!

After a leisurely breakfast and walkies with Rex we took a steamy, sweaty stroll to find the boardwalk across the lake. According to the camp map this was less than a mile away – LOL! Defeated we took a shortcut back to camp to cool off.

Debbie texted that Leo was determined to find the boardwalk so we hopped in his big blue truck… Over to the Newport News park, across the lake from the campground… Success!!!

Way, way off in the distance to the right is a peninsula that blocked our view of the boardwalk- suffice to say it was much more than a mile to hike.

Walking across the lake with wonderful breezes to cool us off was immensely better than bushwhacking along a “trail” in the forest! Leo even dried out! And a gazillion various species of turtle in the water and marsh were doing spring mating dances!


We tried to use our handy selfie stick tripod to get a group photo but it refused to take, so I walked back to the phone and suddenly Viola! Photos! Leo declared it worked perfectly as long as I was not in the frame… Hilarity ensued!



Sigh, nothing but abuse for the bird!

And we got 34 states, including ALASKA! So, THAT’S cool! A practically perfect weekend camping with dear friends!
