
Last weekend we went to see The Importance of Being Earnest at Blackfriars Playhouse! It was excellent as always! Oscar Wilde’s brilliant and wicked play is a comedic masterpiece that unravels a web of mistaken identities, romantic entanglements, and clever deceptions. When two young gentlemen decide to adopt fictitious personas to escape the constraints of societal expectations, a whirlwind of hilarious misunderstandings ensues. As love interests collide and secret pasts are revealed, Wilde weaves a delightful tapestry of wit, absurdity, and biting satire.

Beth Anne showed me the most adorable pj pants while we were in Michigan, No Wake Zone manatee pj’s. I simply HAD to have a pair for myself so the first thing I did when we got home (after unpacking the camper) was to order a pair!

I naturally HAD to add a matching t-shirt…

And today they finally arrived! Totally adorable! So comfy! SO cute! And so PUNny! I believe that I have my new camper pj’s!!!

Loving my new InstantPot/Air Fryer combo! I can make the most delicious egg bites! I first had Egg Bites at Starbucks in Seattle when visiting Tom & Merry. Loved them, so I started buying frozen egg bites for our camping trips. They were delicious but pricey ($1 per egg bite!). I can make seven for about a dollar!
InstantPot Egg Bites!
- 3 large eggs
- 1/4 cup cottage cheese
- 1/4 cup soft cheese, like cream cheese, Brie, Boursin, or Laughing Cow
- 1/2 cup chopped mix-ins, like cooked meats and/or raw or cooked vegetables
- 1/2 cup shredded cheese, such as cheddar, Monterey jack, or mozzarella
- Seasonings (salt/pepper/garlic powder or Anything Bagel seasoning!)
Whisk together the eggs and cottage cheese until smooth, then add in everything else and stir well. Use a small amount of oil or nonstick cooking spray to grease a silicone egg mold, then ladle 1/4 cup of the mixture into each of the impressions in the mold. Wipe off any drips.
Pour 1 cup of water into the Instant Pot or electric pressure cooker. Carefully transfer the egg mold to the wire steam rack, then place aluminum foil on top of the mold to keep condensation from dripping onto the bites as they cook.
Grasping the handles of the steam rack, lower the egg mold into the pot. Put the Instant Pot lid on, select pressure cook on Low for 10 -12 minutes. Let steam naturally release when done. After cooling they can be stored in fridge or freezer!

Ye Olde Farmers Almanac says “If the first week of August is unusually warm, The winter will be white and long.” Considering the first week of August has been in the mid-90’s this seems to predict a lovely cold & snowy winter! Sounds delightful at the moment.
Here’s a recipe I want to try! Tho I’ll modify the fillings as Chris hates spinach when it’s cooked.
Potatoe Pie: Picture layers of comfy potatoes, melty mozzarella, cherry tomatoes, shallots, and wilted spinach, all topped with a creamy, eggy goodness. 🍳🧀 No pastry here – it’s all about the potato magic! 🌿
Ingredients:
2 large potatoes
2 tbsp olive oil (divided)
Salt & pepper to taste
50g mozzarella
8 cherry tomatoes (halved)
5 slices shallots
Handful of spinach (wilted)
2 eggs
2 tbsp cream cheese
1/2 tsp garlic powder
1/2 tsp nutmeg
50ml milk
Parmesan & basil leaves for garnish
Directions:
1. Boil potatoes, then transfer to a 20cm greased baking tin and crush. Press firmly, creating the sides. Drizzle with olive oil, sprinkle with salt, and bake at 200C (fan) for 40-45 min.
2. Add mozzarella, tomatoes, shallots, and spinach.
3. Whisk eggs, cream cheese, salt, pepper, nutmeg, garlic powder, and milk. Pour over the potato base.
4. Bake for 30-35 min until settled.
5. Sprinkle Parmesan, garnish with basil. Potato perfection! 🍴
